mixed mushrooms (Portobello, oyster, button – cleaned and thinly sliced)
1 tsp
tomato paste

garlic clove, minced

soy sauce
1 tbsp
mild mustard
½ tbsp
tbsp smoked paprika
½ tsp
cumin
½ tbsp
fresh thyme leaves
50 ml
olive oil
Salt
pepper
For Serving
Pita bread
Tomato slices
Onion slices

Execution
Slice mushrooms thinly and place in a large bowl.
In another bowl, mix all remaining ingredients to make the marinade. Pour it over the mushrooms and toss to coat well.
Heat a large pan over medium-high heat.
Sauté the mushrooms in batches until golden. Transfer each batch to a bowl and repeat.
Cut the pitas in half, add your favorite toppings, and finish with the sautéed mushrooms. Serve immediately.
