Grilled broccoli with whipped feta cream

For the broccoli:
300 g
broccoli (about half a head)
2 tbsp
olive oil
Salt
Pepper
Ice cubes & cold water (for blanching)
For the feta cream:
200 g
feta cheese
80 ml
heavy cream
½ tsp
smoked paprika
Zest of ½ lemon
Freshly ground pepper
For serving:
1 tbsp
almond flakes
1 tbsp
basil leaves
Zest of ½ lemon
Execution
Cut broccoli into long florets.
Boil for 1 minute in salted water, then transfer immediately to a bowl with ice water.
Drain and pat dry with paper towels.
Toss with olive oil and grill over charcoal for 5 minutes until charred. Season with salt and pepper.
Blend feta, cream, smoked paprika, lemon zest, and pepper until smooth and creamy.
Toast the almond flakes in a dry pan until golden.
Serve broccoli over dollops of feta cream, topped with lemon zest, basil leaves, and toasted almonds.
