Bulgur patties with halloumi

cups cooked Cypriot-style bulgur (with tomato & onion)
2
slices white sandwich bread
½
onion
1
garlic clove
2 tbsp
fresh mint and parsley
1 tsp
oregano
2 tbsp
all-purpose flour
½ tsp
baking powder
2
eggs
3 tbsp
breadcrumbs
Salt
pepper
Halloumi, cut into 1 cm cubes
Extra flour (for coating)
Oil (for frying or air fryer)
Μέθοδος Εκτέλεση
Blend the bulgur, bread, onion, garlic, herbs, flour, baking powder, eggs, salt, and pepper until smooth.
Check texture—add a splash of water or olive oil if too dry.
Take a spoonful of the mixture, flatten it, place a halloumi cube in the center, cover with more mixture, and shape into a ball.
Coat each patty in flour.
Fry in hot oil until golden or air-fry at 180°C for 12–15 minutes, after spraying with oil.
Serve warm with yogurt on the side.
