Blend until smooth. Add breadcrumbs and mix well until combined. Cover and refrigerate the mixture for 30 minutes. Shape into small patties and shallow fry in a non-stick pan with olive oil, 2–3 minutes on each side until golden. Alternatively, bake in the oven at 200°C for 10 minutes. Slice the tomato, cut the lemon in half, and slice the pickles if large. Open the brioche buns and fill with patties, tomato slices, pickles, yogurt, and a few drops of lemon juice.
