Baked penne with caramelized onions, mushrooms & chicken

heavy cream

mozzarella
150 g
cheddar
150 g
graviera
salt
pepper
Instructions
Slice the onions thinly and sauté them in a deep pot with the olive oil over low heat until softened and caramelized for 15 minutes.
Add the sliced mushrooms and sauté for 3 minutes until their liquids evaporate.
Add the chicken in pieces, salt, pepper and paprika. Sauté until browned
Boil the penne 2 minutes less than the package time and drain.
For the sauce, melt the butter in a pot, add the flour and stir for 1 minute. Warm the milk and cream in another small pot so the bechamel doesn’t lump later. Add the milk and cream until it thickens. Add the ¾ of the cheeses, salt and pepper.
Combine in the pot the penne, onions, mushrooms and chicken. Add the sauce and mix.
Transfer to a baking dish, sprinkle the remaining cheese on top and bake at 190°C for 20–25 minutes until golden.
