Homemade ketchup

olive oil

onions, finely chopped
600 g
tomatoes, chopped
1 tbsp
tomato paste
2
cloves garlic, minced
150 ml
red vinegar
150 g
brown sugar
2 tsp
mild mustard
½ tsp
smoked paprika
½ tsp
ground coriander
½ tsp
ground cloves
½ tsp
salt
½ tsp
pepper
Execution
Sauté the chopped onions in olive oil over low heat for about 3-4 minutes until soft and translucent.
Add the chopped tomatoes, tomato paste, and all remaining ingredients. Stir well, cover, and let simmer for about 30 minutes.
Blend the mixture until smooth.
Strain through a fine sieve to remove seeds or fibers, then return to the pot.
Simmer on low heat for another 30 minutes, stirring occasionally, until thickened.
Store the ketchup in a clean jar and keep it refrigerated.
