Oat banana pancakes with peanut butter cream

For the Pancakes:
2
ripe bananas (medium-sized)
2
eggs
130 g
oats
2 tsp
baking powder
30 ml
honey
125 ml
milk
1 tsp
vanilla extract
3 tbsp
olive oil (for cooking)
For the Peanut Butter Cream:
240 ml
heavy cream (for whipping)
120 ml
peanut butter
3 tbsp
powdered sugar
For Serving:
2 tbsp
maple syrup
Prepare the Pancakes:
In a blender, combine all pancake ingredients and blend on high speed for 30 seconds.
Let the batter rest in the fridge for 20 minutes.
Heat a non-stick pan and add 1 tbsp olive oil. Pour small portions of batter into the pan, leaving space between them.
When the edges start to caramelize and lift easily, flip them and cook for 2-3 minutes on each side until golden.
Transfer cooked pancakes to a plate and wipe the pan with a paper towel. Repeat until all the batter is used.
Prepare the Peanut Butter Cream:
In a medium bowl, whisk the heavy cream, peanut butter, and powdered sugar until light and fluffy, like mousse.
To Serve: Stack the pancakes, add a generous amount of peanut butter cream, and drizzle with maple syrup.
