Ingredients (for 12 servings)
350 g
heavy cream (35-36% fat)
65 g
sugar
Zest of 1/2 lemon
50 ml
fresh lemon juice (keep the lemon shells for serving - from 3 lemons)
1
vanilla
A pinch of salt
For Serving:
1 tbsp
fresh mint leaves
Zest of 1/2 lemon
Execution
Place the heavy cream and sugar in a saucepan and heat until it reaches a boil. Reduce the heat and let it simmer for 3 minutes.
Remove from heat, add the lemon zest, lemon juice, vanilla, and a pinch of salt. Mix well.
Allow the mixture to cool slightly for 5 minutes, then pour into the lemon shells or serving glasses.
Refrigerate for 2-3 hours before serving.
Garnish with lemon zest and fresh mint leaves before serving.
