Orzo with peas, spinach & feta

unsalted butter

large spring onions, thinly sliced
2
large garlic cloves, minced
500 ml
vegetable broth
200 g
orzo pasta
Zest from half a lemon
200 g
coarsely chopped spinach leaves
100 g
feta cheese
100 g
cooked peas
2 tbsp
fresh parsley, finely chopped
Salt
Pepper
For serving:
20 g
feta cheese
1 tbsp
freshly chopped onion
Cooking Method
Heat the butter in a pan and sauté the onions and garlic for 2 minutes.
Add the orzo, broth, and lemon zest.
Cook for 15 minutes until most of the broth is absorbed.
Add spinach, salt, and pepper, and cook for 5 minutes until wilted.
Stir in feta, peas, and parsley, and let sit for 1 minute.
Serve topped with extra feta and sliced spring onions.
