baguette or Italian bread (e.g. ciabatta)

ripe tomatoes, diced
1/2 clove
garlic, minced (+1 whole clove for rubbing on bread)
1 tbsp
fresh basil leaves
3 tbsp
extra virgin olive oil
1 tbsp
balsamic vinegar

Method
Slice the bread into 1.5 cm thick pieces and toast in the oven with olive oil for 5-7 minutes at 180°C, until crispy.
Dice the tomatoes and mince the garlic. Place them in a bowl.
Add the basil, olive oil, balsamic vinegar, salt, and pepper, then mix well.
Take the toasted bread slices and top them with the tomato mixture.
Serve immediately, as bruschetta is best enjoyed fresh and crispy.
