Mediterranean Shakshuka with tomatoes and olives

onion, finely chopped

garlic cloves, minced

red bell pepper, sliced

canned chopped tomatoes
1/3 tsp
cumin
100 g.
kalamata olives

eggs
Salt
Pepper
Fresh parsley for garnish
2 slices
of bread for serving
Execution
Heat olive oil in a pan. Sauté the onion and garlic for 2-3 minutes.
Add the bell pepper and sauté for another 5 minutes.
Stir in the tomatoes, cumin, salt, and pepper. Let it simmer for 10 minutes.
Add the olives and make 4 small wells in the sauce. Crack the eggs into the wells.
Cover the pan and cook for 4-5 minutes until the eggs are set.
Garnish with fresh parsley and serve warm with toasted bread.
