Bean patties with brioche buns

For the patties
400 g
stewed beans, drained (2 cups)

egg

garlic clove

large onion

smoked paprika
½ tsp
cumin
½ tsp
ground coriander
4 tbsp
breadcrumbs
2 tbsp
parsley
Salt
Pepper
For frying
2 tbsp
olive oil
For serving

brioche buns
1
tomato
1
lemon
100 g
strained yogurt (½ cup)
Pickled cucumbers
Execution
In a blender, combine the drained beans, egg, garlic, onion, spices, and parsley. Blend until smooth.
Add breadcrumbs and mix well until combined.
Cover and refrigerate the mixture for 30 minutes.
Shape into small patties and shallow fry in a non-stick pan with olive oil, 2–3 minutes on each side until golden. Alternatively, bake in the oven at 200°C for 10 minutes.
Slice the tomato, cut the lemon in half, and slice the pickles if large.
Open the brioche buns and fill with patties, tomato slices, pickles, yogurt, and a few drops of lemon juice.
