Caramelized grilled chicken wings

chicken wings
3 tbsp
olive oil
3 tbsp
brown sugar
1 tbsp
smoked paprika
Salt
Pepper
For the glaze:
60 g
butter (4 tbsp)
3
anchovy fillets
1 tbsp
chopped fresh thyme
2 tbsp
chopped parsley
Execution
Cut the wings in half at the joint and remove the tips.
In a large bowl, combine wings with brown sugar, paprika, olive oil, salt, and pepper. Mix well.
Grill over medium heat for about 10 minutes per side, until golden and fully cooked inside.
In a small saucepan, melt the butter over low heat. Add anchovies and stir until fully dissolved.
Add thyme and parsley to the butter and mix.
Once the wings are almost done, brush them with the anchovy butter glaze.
Grill for 1–2 more minutes per side until shiny and caramelized. Serve hot.
