Caramelized strawberries

cocoa powder
Instructions
Line a baking tray with parchment paper. Wash the strawberries well, dry them very well and remove the stems. Thread them onto skewers, 3–4 strawberries on each one, and place them on the tray.
Prepare a bowl with ice-cold water and ice cubes and keep it next to you.
In a saucepan over medium heat, add the sugar, water and cocoa powder. Do not stir with a spoon; you can stir with the skewer you will use for the strawberries later. Check the temperature with a thermometer (it should reach 150°C). If you don’t have one, drop a little caramel with a spoon into the ice water; if it hardens immediately, it’s ready. The texture should resemble thick honey and bubble vigorously.
Remove the saucepan from the heat immediately. Do not touch the caramel; it is extremely hot.
Pour over or dip the strawberries in the caramel and immediately dip the skewers into the bowl of ice water to harden the coating.
Place them back on the parchment paper and serve immediately.
