Dubai-style truffles with dates, chocolate & kadaifi

Υλικά
For the truffles:
150 g
soft dates
80 g
pistachios
100 g
dark chocolate (couverture)
2 tbsp
cocoa powder
1/2 tsp
ground cardamom
1
A pinch of salt
2
pieces syrup-soaked kadaifi (about 150 g)
For the coating:
50 g
melted dark chocolate
2 tbsp
chopped pistachios
Execution
Pour 100 ml of hot water over the dates and let sit for 10 minutes until soft. Drain and keep only the dates.
Break the syrupy kadaifi into fine strands and set aside.
In a blender, blend the dates, pistachios, cardamom, and cocoa until smooth.
Add most of the kadaifi (save a bit for garnish), blend again, and chill for 10 minutes until firm.
Shape the mixture into small bite-sized balls.
Melt the chocolate in a microwave or double boiler.
Dip the truffles in melted chocolate and sprinkle with chopped pistachios and a bit of the reserved kadaifi.
