Execution
Crack the eggs into a bowl and lightly beat them with a fork or whisk, just until combined without incorporating too much air. Add a pinch of salt.
Heat a non-stick pan over medium-low heat. Add the butter and melt it gently without browning.
Pour the eggs into the pan and stir constantly with a rubber spatula in circular motions, scraping the bottom, similar to the beginning of scrambled eggs. This takes about 30 seconds.
Once the eggs start to set but are still slightly wet on top, stop stirring.
Remove the pan from the heat, tilt it, and using the spatula, gently roll the omelette from the handle side downward.
Carefully slide the omelette onto a plate with the seam side down. Optionally, sprinkle with chopped chives before serving.
