For the Halloumi Gyros

halloumi
1 tbsp
dried herbs and spices (oregano, paprika, garlic powder, cumin)
1 tbsp
olive oil
1 tbsp
Greek yogurt
For serving
½
red onion
½
cucumber
1
tomato
juice of ½ lemon
½
lettuce
2 tbsp
talattouri
2

Instructions
For the halloumi, pat it dry well with kitchen paper. Using a peeler, “shave” it into long strips from top to bottom. If any pieces break, cut them as thinly as possible.
Place the halloumi, yogurt, olive oil and herbs in a bowl. Mix gently so they are evenly coated without breaking up the strips.
Spread the halloumi on a baking tray lined with parchment paper as evenly as possible. Bake at 180°C for 15 minutes.
Remove it from the oven and let it rest for 2 minutes to set.
For serving, warm the pitas. Spread talattouri on the base, add lettuce, tomato, cucumber and onion, drizzle with the lemon juice and place a generous amount of the halloumi on top. Serve immediately while warm.
