For the cream cheese layer
300 g
cream cheese
50 g
sugar

eggs

lemon (zest)
For the lemon glaze
100 g
powdered sugar
30 ml
lemon juice
zest from 1 lemon
1/2 tsp
vanilla extract
Instructions
Preheat the oven to 170°C fan mode and line a square baking pan about 20×20 cm with parchment paper.
In a bowl, mix the melted butter with the sugar. Add the eggs and continue mixing until combined.
Add the lemon zest and juice. Add the flour and salt and mix until you have a smooth batter. Transfer to the pan and spread evenly.
In a blender, blend the cream cheese, sugar, eggs and lemon zest until smooth and creamy.
Add the cream cheese mixture over the batter and spread it with a spatula.
Bake for about 20 minutes. The brownies are ready when the edges are set but the center remains slightly soft and jiggly. We do not want the knife to come out dry. If it comes out clean, they are overbaked and will turn cakey.
Let cool for about 1 hour before cutting into pieces.
For the glaze, add the powdered sugar, lemon juice, zest and vanilla to a bowl.
Mix well until you have a smooth, thick glaze. Pour the glaze over the brownies.
