Marry me chicken pasta with sun-dried tomatoes

penne pasta
1 tbsp
olive oil
2 tbsp
oil from sun-dried tomatoes
2 tbsp
corn flour
1 tbsp
butter
3
garlic cloves, finely chopped

sun-dried tomatoes, finely chopped
200 ml
heavy cream
150 gr
freshly grated Parmesan cheese
200 ml
chicken stock
2 tsp
dried oregano
1 tbsp
smoked paprika
Salt and pepper
1 tbsp
fresh basil for garnish
Execution
Cook the pasta in salted water until al dente, following the package instructions. Reserve ½ cup of the pasta water and drain the rest.
In a bowl, coat the chicken cubes with cornstarch, ensuring an even coating.
Heat olive oil in a pan. Sear the chicken with salt and pepper for 5-6 minutes until golden brown. Remove the chicken from the pan.
In the same pan, melt the butter. Add the smoked paprika, oregano, garlic, sun-dried tomatoes, and their oil. Sauté for 1-2 minutes until fragrant.
Pour in the chicken stock and heavy cream. Simmer for 3-5 minutes, then add the Parmesan cheese, stirring until the sauce thickens.
Return the chicken to the pan, allowing it to simmer in the sauce and absorb the flavors. Add the cooked pasta and mix well.
Serve garnished with fresh basil and extra Parmesan cheese.
