Mediterranean shakshuka with tomato, olives, and Cypriot sausage

green bell pepper, sliced

canned chopped tomatoes

smoked paprika

cumin

olives

Fresh parsley for garnish

slices of bread for serving
Execution
Heat the olive oil in a skillet. Sauté the onion and garlic for 2-3 minutes.
Add the Cypriot sausage, and after 2 minutes, add the green pepper and sauté for 5 minutes.
Add the chopped tomatoes, paprika, and season with salt and pepper. Let it simmer for 10 minutes.
Create 4 wells in the sauce and crack the eggs into them.
Add the olives.
Cover the skillet and cook the eggs for 4-5 minutes.
Garnish with parsley and serve hot with warm bread on the side.
