mussels
1 onion
finely chopped
1 clove
garlic, finely chopped
10 gr
ginger, finely chopped
2 sprigs
fresh thyme
2 sprigs
rosemary
2 tbsp
olive oil
1 tbsp
butter
Juice of half a lemon
30 ml
ouzo
Optional: ½ chili pepper
Baguette
Salt and pepper
Method of Execution
Place the mussels in a bowl of water with salt for 30 minutes. Then clean them, removing the “beards” by pulling them toward the hinge side of the shell.
Heat a pot over medium heat with olive oil and sauté the onion, garlic, ginger, and herbs until they turn golden.
Add the mussels, deglaze with the ouzo and lemon juice.
Cover with a lid and simmer on low heat for 3 minutes until the mussels open. Discard any mussels that remain closed.
Serve with chopped chili, lemon zest, and warm baguette. Enjoy!
