Roasted cherry tomatoes with burrata

cherry tomatoes
1
garlic clove, minced
3 tbsp
olive oil
1 tsp
fresh thyme
Salt
pepper
1
burrata (125g)
1 tbsp
fresh basil leaves (for serving)
Zest of ½ lemon
Execution
Preheat oven to 180°C (fan).
Place cherry tomatoes on a baking tray. Add garlic, thyme, salt, pepper, and olive oil. Mix well.
Roast for 20 minutes, until soft and lightly caramelized.
Let tomatoes cool slightly for 1–2 minutes.
Tear the burrata by hand and place it on a plate.
Add the roasted tomatoes, garnish with basil, drizzle with olive oil, and finish with lemon zest and freshly ground pepper.
