Potato latkes with smoked salmon and cream cheese

For serving:
200 g
cream cheese
100 g
smoked salmon (sliced)
1 tbsp
chopped chives
Zest of ½ lemon
1 tbsp
capers
Execution
Grate the potatoes using the coarse side of a grater. Place them in a clean kitchen towel or strainer and squeeze out as much moisture as possible.
In a bowl, combine the grated potatoes with the melted butter, salt, and pepper.
Preheat a pan over high heat and add the olive oil.
Spoon the potato mixture into the pan (4 latkes at a time), flattening them slightly. Cook over medium heat for about 5–6 minutes per side, until golden and crispy.
Once ready, serve with cream cheese, smoked salmon, lemon zest, capers, chopped chives, and freshly ground black pepper.
