Potato croquettes with mozzarella & tomato sauce

For the croquettes:
400 g
boiled or jacket potatoes (about 3 medium)
20 g
cornstarch
½ tsp
sweet paprika
Salt
pepper
150 g
mozzarella, cubed
2 tbsp
olive oil
For the sauce:
2
ripe tomatoes, grated
1 tsp
dried thyme
⅓ tsp
garlic powder
1
onion, chopped
2 tbsp
olive oil
1 tbsp
fresh basil, roughly chopped
Salt
pepper
Execution
Peel and mash the potatoes in a bowl.
Add cornstarch, paprika, salt, and pepper. Mix well with your hands until smooth.
Shape into flat balls (~40 g), add mozzarella inside each one, and seal tightly.
Heat olive oil in a pan and cook croquettes until golden on both sides.
For the sauce: Sauté the onion in olive oil for 2 minutes.
Add tomatoes, garlic powder, thyme, salt, and pepper. Simmer for 10 minutes.
Finish with fresh basil.
Serve the croquettes with the warm tomato sauce on the side.
