Carrot cake with cream cheese & white chocolate frosting

For the cake:
400 g
sugar
250 g
pastry flour
4
medium carrots, grated. 1 large red apple, grated (Tip: Blend the carrot and apple with ½ glass water, strain the juice, and use the pulp for the cake)

chopped walnuts
125 ml
sunflower oil

Pinch of salt

cinnamon

baking powder
For the frosting:
350 g
cream cheese
175 g
powdered su
175 g
white chocolate, melted
Execution
Add all cake ingredients to a mixer: oil, sugar, eggs, flour, cinnamon, salt, baking powder, grated carrot and apple, and walnuts. Mix until smooth.
Pour into a greased cake pan and bake at 180°C (350°F) for about 45 minutes, or until a knife inserted in the center comes out clean.
Let the cake cool completely before frosting.
For the frosting: melt the white chocolate and let it come to room temperature.
Απλώνουμε το γλάσο πάνω από το κέικ και διατηρούμε στο ψυγείο μέχρι το σερβίρισμα.
Spread the frosting on top of the cake and chill until ready to serve.
