raw prawns, cleaned
30 ml
olive oil (2 tbsp)
30 g
butter
2 cloves
garlic
80 g
sun-dried tomatoes
120 ml
white wine (½ cup)
200 ml
heavy cream
40 g
grated parmesan
1
lemon zest
salt
pepper
fresh basil
Instructions
Heat the olive oil with the butter in a large pan over medium-high heat.
Add the prawns, salt and pepper, and sauté for 1–1½ minutes per side until they take on some colour. Remove them temporarily.
In the same pan, add the garlic and sun-dried tomatoes and sauté for a few seconds until fragrant.
Deglaze with the white wine and let it reduce by half.
Add the cream, lower the heat, and stir until the sauce thickens.
Return the prawns to the pan and cook for 2–3 minutes until glazed.
Remove from the heat, add the lemon zest, parmesan and fresh basil, and serve immediately with mashed potatoes, bread or rice.
