Chicken patties stuffed with cheese

For the patties:
350 g
chicken thigh mince

egg
70 g
breadcrumbs or panko
½
red bell pepper, finely chopped
1
onion, sautéed
½
carrot, grated
½
garlic clove, minced
1 tbsp
olive oil
1 tsp
sweet paprika
Salt & pepper
For the filling:
80 g
cream cheese
40 g
parmesan cheese
Salt & pepper
Execution
Sauté the onion in a little olive oil until soft and translucent (about 5-7 minutes). Let it cool slightly.
In a bowl, mix the minced chicken with the egg, breadcrumbs, bell pepper, sautéed onion, carrot, garlic, olive oil, paprika, and smoked paprika. Season with salt and pepper and mix well until fully combined.
For the filling, in a bowl, combine the cream cheese and Parmesan, salt, and pepper.
Divide the mixture into 5 equal portions and shape into small patties.
Make a small indentation in each patty and fill it with the cream cheese and parmesan mixture. Seal the patties well to prevent the filling from leaking during cooking.
If not grilling, heat some olive oil in a pan and fry the patties over medium heat for about 4-5 minutes per side until golden brown and cooked through.
