Add more flour if needed. In another bowl, mix mozzarella, halloumi, cream cheese, and thyme for the filling. Divide the dough into 17 pieces (about 30g each). Flatten, add 1 tsp of filling in the center, and shape into sealed balls. Arrange the balls on a baking tray lined with parchment paper to form a Christmas tree: 1 on top, then 2, 3, 4, 5, and finally 2 for the trunk. Let the balls slightly touch. (Optional: sprinkle extra mozzarella between rows to create a pull-apart effect.) Mix all topping ingredients and brush the tree.
