Christmas tree-shaped pavlova

For the meringues

For the whipped cream

lemon juice
For the sauce

berries

vanilla extract

honey

pomegranate

kumquats, sliced into rounds
1 tbsp
mint leaves
Instructions
For the meringues, preheat the oven to 100°C. Whip the egg whites (at room temperature) until fluffy and gradually add the sugar until the meringue becomes stiff and glossy. In the last minute add the icing sugar and fold in gently.
Transfer the meringue to a baking tray lined with parchment paper and form 5 circles, from the largest to the smallest. Bake for 1 hour 30 minutes and leave the meringues in the oven until they cool and dry with the oven door slightly open.
For the whipped cream, whip the heavy cream until it thickens. Add the cream cheese, honey and lemon and continue whipping until you have a stable, fluffy cream.
For the sauce, warm the berries with the honey and vanilla over low heat until they soften.
For assembly, place the largest meringue circle on a platter, spread cream and a little sauce. Continue with the remaining circles to create the tree.
Finish with pomegranate, kumquats, berry sauce and mint, and serve.
