Crispy grated kolokasi with fried eggs

For the grated kolokasi
1
large kolokasi, coarsely grated
1 tbsp
olive oil
1 tbsp
butter
salt
For serving
2
eggs
1 tbsp
olive oil
salt
pepper
Instructions
Squeeze the grated kolokasi well to remove as much moisture as possible.
Heat a pan over medium heat and add the olive oil and butter. Spread the kolokasi, covering the bottom of the pan evenly.
Cook until the underside is golden and crispy. Flip carefully and cook the other side until it has the same texture, then season with salt and pepper.
For serving, fry 2 eggs in a little olive oil, keeping the yolk runny. Place the eggs on top of the crispy grated kolokasi and serve with salt and pepper.
