For the dough
1000 g
00 farina flour
500 ml
milk
100 g
eggs
180 g
sugar
20 g
salt
160 g
unsalted butter (room temperature)
15 g
dry yeast
For dusting

Instructions
For the dough, add all ingredients except the butter to the mixer bowl and knead on low speed for 5 minutes.
Continue kneading on high speed for another 8 minutes and add the butter in 3 additions.
Rest the dough for 20 minutes, covered with plastic wrap.
Portion the dough into 40 g balls for mini donuts.
Shape the donuts into a round ball shape.
Place the donuts on a baking tray and rest for 2 hours until puffed.
In a deep pan add oil and fry at 170°C for 1.5 minutes on one side and 1.5 minutes on the other.
Dust with sugar and fill with any filling you like ( jam, pastry cream or hazelnut praline)
