medium onion, finely chopped

garlic clove, minced

green olives, pitted and halved
200 g
cooked black-eyed peas (leftovers)
2 tbsp
walnuts, roughly chopped
1/2 tbsp
flour
1,5 tbsp
white vinegar
Salt
freshly ground pepper
Execution
In a pan, heat olive oil and sauté onion, garlic, and olives over medium heat until soft and caramelized.
Add black-eyed peas and walnuts. Stir well.
Sprinkle with flour and sauté for 1–2 minutes.
Deglaze with vinegar and let it evaporate.
Season with salt and pepper. Serve warm.
