Exotic banana and coconut bars

ripe bananas (if not fully ripe, add 60g honey)
220 g
oats
60 g
shredded coconut
80 g
chocolate chips
For Garnish:
100 g
peanut butter
50 g
honey
80 g
dark chocolate (roughly chopped)
Execution
Blend the bananas with honey using an immersion blender or regular blender until smooth.
Add the oats and shredded coconut, mixing well with a spatula or spoon until a firm mixture forms.
Fold in the chocolate chips and stir to combine.
Transfer the mixture to a medium-sized baking pan (25x35 cm) lined with parchment paper and spread evenly.
Bake in a preheated oven at 175°C for 30 minutes.
Once baked, cut into 10-12 rectangular bars.
Let them cool for about an hour, then drizzle with melted peanut butter (melted in a bain-marie or microwave with honey).
Finally, top with roughly chopped dark chocolate and store in the fridge for up to a week.
