Fluffy whole wheat bread

packets dry yeast (14g)
2 tbsp
honey
650 ml
lukewarm water
900 g
whole wheat flour
2 tsp
salt
1 tbsp
sugar or honey
100 ml
olive oil
1 tbsp
sunflower oil (for greasing the pans)
Execution
In a large bowl, mix yeast, honey, and lukewarm water. Cover with a towel and let it activate for 15 minutes until bubbly.
In a mixer, combine flour and salt.
Add the activated yeast mixture and olive oil. Knead in the mixer for 10–15 minutes until smooth and elastic. Knead for 2 more minutes on a clean surface.
Let the dough rise in a warm place, covered, for 1 to 1.5 hours, until doubled in size.
Divide into two loaves, shape them, and place into greased pans. Let them rise again for 30 minutes. Score the top with a knife.
Preheat oven to 180°C and bake for 35–40 minutes, until golden and hollow-sounding underneath.
Let cool on a wire rack before slicing.
