Lemon orzo with chicken

chicken fillet (cut into small cubes)

onion (finely chopped)

garlic clove (finely chopped)
1 tbsp
thyme
Juice of 1 lemon
Zest of 1 lemon
700 ml
chicken broth
50 g
butter
60 g
kefalotyri cheese (grated)

Execution
Heat half of the butter in a large pan.
Add the chicken and sauté over medium heat until golden on all sides, seasoning with salt and pepper (about 5 minutes). Remove the chicken from the pan and set aside.
In the same pan, add the remaining butter. Sauté the onion, garlic, and thyme until softened and translucent.
Add the orzo to the pan and sauté for 2-3 minutes until slightly golden.
Pour in the lemon juice, zest, and chicken broth, seasoning with salt and pepper.
Let the mixture simmer over medium heat, stirring occasionally to prevent sticking, for about 15-17 minutes.
Serve warm with grated kefalotyri cheese.
