Orzo risotto with sun-dried tomatoes, cherry tomatoes & parmesan

onion (finely chopped)

garlic clove (finely chopped)
200 g
orzo pasta
150 g
cherry tomatoes (halved)
80 g
sun-dried tomatoes (chopped)
700 ml
hot vegetable or chicken broth
30 g
butter
50 g
grated parmesan + 2 tbsp extra for serving

Execution
In a large pan, sauté the onion and garlic with the olive oil for 2–3 minutes.
Add the cherry tomatoes and sun-dried tomatoes and let them soften for 3–4 minutes.
Add the orzo and stir well.
Gradually pour in the broth, stirring constantly and letting each addition absorb before the next.
When the orzo is ready (after about 20 minutes), remove from heat and stir in the butter and parmesan.
Taste and adjust with salt and pepper. Serve immediately, topped with extra parmesan if desired.
