Penne with shrimp, vodka & cherry tomatoes

pack of leftover cooked penne

shrimp

olive oil

small onion, finely chopped

garlic cloves, minced
150 g
cherry tomatoes, halved
50 ml
vodka
200 ml
heavy cream
1 tsp
dried thyme
Fresh parsley
50 g
grated Parmesan
Salt
Pepper
Execution
If you don’t have leftover penne, cook them in salted water according to the package instructions and reserve 100 ml of the pasta water.
In a large skillet, heat the olive oil. Sauté the chopped onion and garlic for 2–3 minutes.
Add the halved cherry tomatoes and cook for 3–4 minutes until softened.
Add the shrimp and sauté for 1–2 minutes until they change color.
Deglaze with vodka and let the alcohol evaporate for 1 minute.
Add the cream and thyme. Lower the heat and simmer for 3–4 minutes until the sauce thickens.
Toss in the drained penne and mix well. Add some reserved pasta water if needed.
Finish with freshly ground pepper, chopped parsley, and serve immediately.
