Execution
Place the cold puff pastry sheet on a tray and cut it into a Christmas tree shape. Use the leftover pieces to cut out stars with a cookie cutter.
In a bowl, mix goat cheese, grated halloumi, chopped cranberries, and thyme.
Spread the filling on the puff pastry base and cover with the second sheet cut in the same shape.
Cut horizontal slits on both sides of the tree and gently twist each strip to form “branches.” Add the stars around and on top.
Brush with beaten egg and bake in a preheated oven at 190°C for 25 minutes until golden and puffed.
For the fruit sauce, simmer the berries, honey, and lemon juice for 10 minutes until softened and slightly thickened.
Serve the tree warm with the berry sauce on the side.
