capers, finely chopped

red onion, finely chopped

lemon (zest only)

olive oil
1 tbsp
Dijon mustard
1 tbsp
chopped coriander
1 tbsp
chopped basil

Execution
Peel and dice the potatoes into small cubes. Boil them in cold water for 15–20 minutes until tender but not mushy. Drain and let them cool.
In a jar, add the chopped sun-dried tomatoes, capers, red onion, and lemon zest.
Add olive oil, Dijon mustard, chopped herbs, salt, and pepper.
Add the cooled potatoes, seal the jar, and shake gently to coat everything with the dressing.
Serve straight from the jar.
