vegetable broth

red tomatoes (grated)

medium-sized shrimp (peeled)

Parmesan cheese
Juice and zest of half a lemon

butter

Execution
In a pot, bring the vegetable broth to a boil and add the pasta. Cook according to package instructions.
Meanwhile, start preparing the sauce. Heat a pan over medium heat and add olive oil. Sauté the onion, garlic, and thyme until golden. Add the tomato paste.
Add the shrimp and sauté for half a minute on each side. Increase the heat and add the ouzo. Once the alcohol evaporates, remove the shrimp and add the grated tomatoes, pasta water, salt, and pepper.
Once the pasta is ready, drain it and add it to the pan with the sauce. Return the shrimp to the pan and cook for a short while until the sauce sticks to the pasta.
Remove from heat and add butter and half of the Parmesan cheese. Stir to combine.
Serve with the remaining Parmesan cheese and freshly ground pepper.
