onion, finely chopped

sausage, diced

bell pepper, chopped

cherry tomatoes, halved
100 g
zucchini, roughly chopped
50 g
spinach
½ tsp
black pepper
100 g
kefalotyri cheese, grated
50 g
feta cheese
2 tbsp
parsley, chopped
Execution
In a large bowl, whisk eggs with heavy cream, salt, and pepper.
Heat olive oil in a large skillet. Sauté onion and garlic for 2-3 minutes until translucent.
Add sausage, bell pepper, tomatoes, and zucchini. Sauté for 5-7 minutes until softened.
Stir in spinach and cook for 1 more minute.
Pour the egg mixture over the vegetables and lightly stir.
Sprinkle grated kefalotyri and feta on top.
Cover with a lid and cook on low-medium heat for 10-15 minutes until set.
Garnish with parsley and serve warm or cold.
