feta, crumbled

ripe tomatoes, grated
1 tbsp
olive oil
½ tsp
sugar
½ tsp
oregano

fresh basil leaves, chopped
Salt
pepper
2-3
slices of bread for serving
Execution
In a pan, heat the olive oil and sauté the onion and pepper until soft.
Add the grated tomatoes, sugar, and oregano. Simmer for 10 minutes until the liquid reduces.
Beat the eggs and pour into the pan, stirring constantly for about 30 seconds.
Remove from heat, add crumbled feta and chopped basil, and gently mix.
Serve immediately with toasted bread.
