Salmon tostada

smoked salmon
1/2
red onion, finely chopped
5 g
fresh ginger, grated
Zest & juice of ½ lemon
10 ml
soy sauce (light)
5 ml
sesame oil

2 corn tortillas
100 ml
sunflower oil (for frying)
Salt flakes (fleur de sel)
Pepper
For the avocado purée:
1
ripe avocado
1 tbsp
olive oil
1 tbsp
lemon juice
Salt
Pepper
To garnish:
1 tbsp
φύλλα κόλιανδρου
1 tbsp
tsp toasted sesame seeds
Execution
Heat sunflower oil in a pan over medium heat.
Cut tortillas into small rounds (use a glass or cutter) and fry until golden and crispy on both sides. Drain on paper towel and sprinkle with salt.
In a bowl, mix diced smoked salmon, red onion, ginger, lemon juice & zest, soy sauce, sesame oil, salt, and pepper. Taste and adjust seasoning.
For the avocado purée: mash avocado with lemon juice, olive oil, salt, and pepper until smooth.
To assemble: spread avocado purée on each tostada, top with a spoonful of salmon mixture, and garnish with coriander and sesame seeds.
