Chicken with dried fruits and beer

chicken fillet (2 fillets), cubed
2 tbsp
olive oil
2 tbsp
butter
1 tsp
salt
½ tsp
black pepper

sprigs of thyme
1
large red onion, finely chopped
1 clove
garlic

dried apricots
5
pitted prunes
5–6
dried figs
1 tbsp
Dijon mustard
1 cup
beer
1 tbsp
honey
Instructions
Heat a pan over medium-high heat and add the olive oil and butter. Once melted, add the chopped onion, let it take on some color, then add the chicken and season with salt and pepper.
Add the dried apricots, prunes and figs. Add the mustard and stir.
Pour in the beer, thyme and honey. Lower the heat and let it simmer for 5 minutes until the sauce thickens. It pairs perfectly with mash and rice.
