Shaken accordion potatoes

1 kg
small potatoes, with skin, well washed
salt
250 ml
red wine
2 tbsp
crushed coriander
500 ml
sunflower oil for frying
500 ml
olive oil
Instructions
Score the potatoes making thin, parallel cuts without going all the way through, using 2 chopsticks.
Heat the olive oil and sunflower oil in a pot over low heat and fry the potatoes until they soften, about 30 minutes.
Increase the heat and continue frying for about 5 minutes until crispy.
Remove the potatoes with a slotted spoon and discard the oil.
Put the pot back on the heat, add the potatoes, add the coarsely crushed coriander and cook for 20–30 seconds.
Deglaze with the red wine and let half evaporate, cover the pot with a lid and shake vigorously for 10 seconds so they mix and turn glossy. Serve the potatoes hot.
