Noodles salad with peanut sauce and prawns

200 gr
rice noodles
100 gr
carrot
100 gr
red cabbage

fresh onion

cup roasted cashews
Fresh coriander
1 tbsp
sesame seed mix
For the Sauce:
50 gr
peanut butter
40 ml
soy sauce
50 ml
water
1 tbsp
honey
1 tsp
sesame oil
20 ml
lemon juice
Salt and pepper
Execution
Slice the carrot and red cabbage into julienne strips. Finely chop the green onion.
Meanwhile, bring a pot of water to a boil. Add salt, then remove the pot from heat and add the noodles. Cover and let sit for 3 minutes. Once done, drain and place the noodles in a bowl.
Toast the sesame seeds over low heat.
For the sauce: Combine all sauce ingredients in a bowl, whisking until smooth.
Add the chopped vegetables and sauce to the noodles and mix well.
Serve with fresh lime, sesame seeds, fresh coriander, and roasted cashews on top.
