For the Cream:
500 g
fresh mandarin juice (strained)
400 g
fresh orange juice (strained)
300 g
water
90 g
cornstarch
100 g
sugar
Zest of 1 mandarin
For the Syrup:
250 g
fresh mandarin juice
250 g
sugar
Peel of 1 mandarin
For Garnish:
Segments from 2 oranges
1 tbsp
mint leaves
For the Syrup:
In a saucepan, add the mandarin juice, sugar, and mandarin peel.
Simmer over medium heat until the syrup thickens, then let it cool completely.
Preparing the Cream:
In a saucepan, combine the mandarin juice, orange juice, water, mandarin zest, cornstarch, and sugar.
Stir gently until the sugar dissolves, then turn on the heat to medium.
Continuously whisk the mixture until the cornstarch dissolves and the cream starts to thicken.
Keep stirring and remove from heat once the cream boils and achieves a glossy, smooth texture.
Pour the cream into bowls, glasses, or a Pyrex dish and let it cool for about 30 minutes.
Lightly torch the orange segments with a kitchen torch.
Top with syrup, caramelized orange segments, and fresh mint leaves.
