vanilla extract
Zest of 1 lemon
115 g
unsalted butter, melted
220 g
all-purpose flour
1 tsp
baking powder
½ tsp
baking soda
½ tsp
salt

Instructions
Preheat the oven to 165°C and line a loaf cake tin with parchment paper.
Mix the blueberries with a little flour and set them aside.
In a large bowl, mash the bananas with a fork or hand mixer.
Add the sugar, eggs, vanilla and lemon zest and mix until combined.
Add the melted butter, flour, baking powder, baking soda and salt and mix gently until incorporated.
Transfer the mixture to the tin and add the blueberries on the surface.
Bake for about 45 minutes or until a toothpick inserted into the center comes out clean.
Let it cool completely before cutting into slices.
