For the mix:
50 g
raw walnuts
100 g
raw almonds
30 g
rolled oats
medium carrot, grated
100 g
pitted dried dates
1 tsp
cinnamon
1/2 tsp
nutmeg
1/4 tsp
vanilla extract
1/4 tsp
salt
20 g
shredded coconut
For coating:
50 g
hredded coconut
Execution
Soak the dates in warm water for 10 minutes. Drain and dry well.
Add dates, walnuts, almonds, and oats to a blender or food processor. Pulse until crumbly.
Add grated carrot, spices, vanilla, salt, and coconut. Blend until fully combined. Add 1–2 tbsp water if needed.
Chill mixture for 20 minutes.
Form into 20g balls, roll in shredded coconut, and store in an airtight container in the fridge.
