Chicken meatballs with mozzarella & lemon-honey potatoes

oregano

mozzarella, cubed

olive oil

potatoes
Juice of 1 lemon
1 tbsp
honey
Salt
Pepper
Execution
Peel and slice the potatoes thinly. Place them in a baking dish with a little olive oil, salt, and pepper. Bake at 180°C for 20 minutes.
In a large bowl, mix the ground chicken, egg, panko, oregano, salt, and pepper. Knead well until combined.
Take about 40g of the mixture, insert a cube of mozzarella in the center, and shape into meatballs.
Carefully remove the tray from the oven and place the meatballs on top of the half-cooked potatoes.
In a small bowl, mix the lemon juice with honey and drizzle over the meatballs and potatoes.
Return to the oven and bake for another 30 minutes at 180°C, until golden and cooked through.
